How We Make It
three things, one shop.
Overnight
Flour, water, a pinch of salt, less yeast than you'd think. Mixed at 9pm, sleeps in the walk-in, balled out before lunch.
Crushed by Hand
San Marzano tomatoes, pinch of salt, splash of oil, no sugar. We open the cans every morning and crush them in the bowl by the register.
Deck, Hot
Two-deck stone oven, 650°F downstairs, 700°F up top. Long peel, quick wrist, slid out before you can read the menu twice.
That's it. No truffle oil. No squid ink. No instagram pies.

The Counter
We've got six red-vinyl stools against the window. Sal works the oven on weekdays, Marie works it on Saturdays and shouts at the line when it gets too long, and on Sundays it's whoever drew the short straw. You sit, you eat, you go. The whole shop is twenty-two feet across.
We don't take reservations and we don't do delivery apps. If you call, Sal's wife picks up unless it's after 9, in which case good luck.
No slicing a slice.
